Recipe for Sweet potatoes with apples

Here’s a delicious sounding recipe for Sweet potatoes with apples from the American Cancer Society’s Recipe for Quick-and-easy Healthy Eating from Your Very Own Kitchen.

4 large sweet potatoes or yams, peeled and quartered
1/2 cup light brown sugar, packed
1/4 cup fresh orange juice
2 teaspoons orange rind, grated
1/2 teaspoon cinnamon
2 large, tart cooking apples, unpeeled, slice
2 tablespoons corn oil margarine, chilled and cut into small pieces

Steam sweet potatoes in a steamer over medium heat for 15 minutes or just until tender. Allow potatoes to cool slightly and cut into 1/2-inch slices. Combine brown sugar, orange juice, orange rind, and cinnamon in a small bowl and mix well. Preheat oven to 350°. Layer sweet potatoes, apples, and brown sugar mixture one-third at a time in a baking dish and dot with margarine. bake for 30 minutes or until apples are tender.
Makes 8 servings. Approx. per serving: 159 calories; 3 grams of fat
